Preparation
Step 1
How do you bake chicken drumsticks with rice in the oven? Prepare all the necessary ingredients. You can use any kind of rice, except perhaps the types intended for risotto. You can replace the lime with lemon, but then you will need only half of one.
Step 2
Rinse the chicken drumsticks well and pat them dry.
Step 3
Cut the lime in half and squeeze out the juice. You can do this by hand, but it is better to use a juicer, because that way you will get more juice from the lime.
Step 4
In a deep bowl, combine the soy sauce, vegetable oil, lime juice, chicken seasoning, or seasoning for chicken legs, and ground black pepper.
Step 5
Place the chicken drumsticks into the marinade and mix well so that all the drumsticks are coated with the sauce. Put the drumsticks in the refrigerator to marinate for at least 2 hours, or better yet overnight. Stir the drumsticks from time to time so they absorb the marinade evenly.
Step 6
Sort through the rice and rinse it thoroughly until the water runs clear. Next, you can boil the rice in advance until half-cooked, that is half the time indicated on the package, in plenty of boiling water. But I prefer to leave it raw - it will be ready at the same time as the chicken and will turn out just as fluffy.
Step 7
Grease a baking dish with vegetable oil. Spread the rice in it and level it out. Pour water into the dish so that it completely covers the rice. Choose a baking dish that is larger and fairly deep, because the rice swells a lot and may spill out.
Step 8
If you wish, you can cut half of a second lime into wedges. This will add a citrus aroma to the dish.
Step 9
Place the chicken drumsticks on top of the rice. Pour the remaining marinade over them.
Step 10
Arrange the lime wedges between the chicken drumsticks, if you decide to add them.
Step 11
Cover the dish with foil and place the chicken with rice into an oven preheated to 180°C (350°F) for about 40 minutes. During this time, the rice will absorb all the water, swell, and soak up the juices from the chicken.
Step 12
Then remove the foil. Check whether the rice has burned on the bottom. If there is no moisture left at the bottom, pour another 50 ml of water, about 3 tablespoons plus 1 teaspoon, into the dish and return the chicken to the oven. Bake for another 20-25 minutes, until a beautiful golden crust appears on the chicken. Enjoy your meal!
