Chicken Curry with Rice
A flavorful Indian-inspired dish for a family lunch or dinner! Tender chicken is simmered with curry spices and finished with cream, then served with fluffy rice. Add fresh herbs, mushrooms or extra spices to taste.

Preparation
Step 1
Prepare the ingredients. You can use chicken breast or boneless thigh meat. Adjust the amounts and combination of spices according to taste.
Step 2
Begin cooking the rice. Long-grain parboiled rice works particularly well because it remains fluffy and does not easily overcook. Add the rinsed rice to boiling salted water and cook for about 20 minutes, or according to the package instructions, until tender but not mushy. Drain the cooked rice in a colander. If desired, rinse it briefly with cold water.

Cut the chicken into small pieces.
Step 4
Peel and chop the garlic. Heat the vegetable oil in a frying pan. Add the garlic and cook for about 1 minute so it flavors the oil.
Step 5
Add the chicken to the pan and cook for 3–4 minutes, until the pieces change color.
Step 6
Peel and finely chop the onion. Add it to the chicken.
Step 7
Season the chicken with salt, curry powder, paprika and ground black pepper. Mix well, cover and simmer over low heat for 25–30 minutes. The onion and chicken should release enough liquid for cooking. If the pan becomes too dry, add a little hot water.
Step 8
Once the chicken is tender and well infused with the spices, pour in the cream and bring the sauce to a gentle boil. Higher-fat cream will give the sauce a richer and smoother flavor. Adjust the amount and consistency of the sauce with additional cream or water.
Step 9
Heat everything together for another minute, then remove the pan from the heat.
Step 10
Divide the rice among plates and spoon the curry chicken into the center. Garnish with chopped fresh herbs, if desired, and serve hot.
