Step 1
How to make chicken, cucumber, and tomato salad? Prepare all ingredients. Use cherry or regular tomatoes. For onions, you can use white salad onions, red onions, or shallots. Turkey breast may replace chicken breast.
Step 2
Start by boiling the chicken breast. Cover it with water, bring to a boil over high heat, skim off the foam, lightly salt the water, and cook on medium heat for 20 minutes. Drain the water and let the meat cool.
Step 3
Peel the onion. Rinse cucumber, tomatoes, and onion, then pat dry. If the cucumber has a thick or damaged skin, trim it. For a colorful salad, use cherry tomatoes of different colors.
Step 4
Wash the lettuce thoroughly. Rinse each leaf separately to remove sand and soil. Dry the leaves with a kitchen towel. There should be no excess moisture. Instead of lettuce, you can use iceberg, spinach, romaine, lamb’s lettuce, lollo rosso, or a mix.

Tear the lettuce leaves by hand and place them in a salad bowl.
Step 6
Slice the cooled chicken breast into thin strips.
Step 7
Place the chicken on top of the lettuce. Add the cucumber, sliced into thin rounds or half-moons.

Cut cherry tomatoes in halves or quarters. Very small ones can remain whole. Add them to the salad.

Add thinly sliced onion rings or half-rings and grated hard fermented cheese.
Step 10
Drizzle olive oil or refined vegetable oil over the salad.

Sprinkle with red wine vinegar, salt to taste, and ground pepper. Fresh lemon juice can replace vinegar.

The salad is ready - serve while the ingredients are fresh.
