Chicken and Vegetable Salad
Budget-friendly and made from simple ingredients - no eggs or mayonnaise! This chicken and vegetable salad is easy yet filling, juicy, and incredibly tasty. The dressing is so good, you’ll want to use it in other salads too! Perfect for lunch, dinner, or a quick snack.

Preparation
Step 1
You can substitute chicken breast with turkey breast or another type of meat.
Step 2
Toast the sesame seeds in a dry skillet over medium heat, stirring, until lightly golden.
Step 3
Rinse and pat dry the chicken fillet. Wrap it tightly in foil so that the juices stay inside while baking. Place the wrapped meat on a baking sheet and bake in a preheated 350°F (180°C) oven for 30-35 minutes, until cooked through. Alternatively, you can boil the chicken in salted water or fry it in oil until golden brown - choose the method you prefer.
Step 4
Let the cooked chicken cool, then slice it into thin strips or shred it by hand.
Step 5
Remove the seeds and stems from the bell peppers and slice them into thin strips.
Step 6
Cut the cucumbers into thin strips as well. If the skin is soft and not bitter, you don’t need to peel it.
Step 7
Finely chop or press the garlic.
Step 8
Wash, dry, and finely chop the parsley.
Step 9
For the dressing, I use olive oil, but you can replace it with sunflower or any other vegetable oil. You can also add your own twist - a splash of white wine or apple vinegar, or a bit of honey.
Step 10
In a small bowl, combine olive oil, lemon juice, and whole-grain mustard. Mix well.
Step 11
In a large salad bowl, combine the chicken, bell pepper, cucumber, garlic, and herbs.
Step 12
Season the salad with salt and pepper, pour the dressing over, and toss well. You can also add a special vegetable salad seasoning blend if desired.
Step 13
Transfer the salad to a serving dish and sprinkle with toasted sesame seeds. Enjoy your healthy and refreshing meal!
