Cherry Jam from Pitted Cherries for Winter

Step 1
How do you make pitted cherry jam for winter? Prepare all the necessary ingredients. Choose ripe, juicy berries without visible damage. Remove all stems and leaves. Then wash the cherries well to remove any dirt and drain off all the water. Remove the pits. This can be done by hand, with a hairpin, or with a special cherry pitter.
Step 2
The pitted cherries are ready for making jam. Take an enamel or glass pot and place the berries into it. Sprinkle the cherries with sugar, about 2/3 of the total amount, and shake a little so the sugar is distributed more evenly among the cherries. Cover with a lid and leave for a few hours so the cherries release their juice. Do not use aluminum cookware, so that the berry juice does not cause oxidation.
Step 3
When the cherries have released their juice, place the pot over the heat, bring it to a boil, and simmer for 2-3 minutes over moderate heat. Then remove from the heat, cover with a lid, and leave to cool.
Step 4
Cook the jam this way 2 more times, letting it cool completely in between. Why cook it several times? This is necessary to preserve as many vitamins as possible in the jam and to make the syrup thicker. Before the 2nd cooking, taste the jam. If there is not enough sugar, you can add a little more. Adjust to your taste.
Step 5
Prepare the jars for the jam. Wash them well in running water with baking soda. While still damp, place the jars upside down in a cold oven and bring the temperature up to 150°C (300°F). Sterilize 0.5 L jars for 10 minutes and 1 L jars for 15 minutes. It is enough to pour boiling water over the lids. If you wish, you can also sterilize the jars in the microwave or over steam. Pour the boiling jam into the prepared jars. Be careful, it is hot. Seal with the lids.
Step 6
Turn the jars upside down and check that they are sealed tightly. While upside down, wrap the jars in a warm blanket and let them cool this way. Why wrap them in a warm blanket? This helps the jam cool as slowly as possible. It will also become a little thicker. After cooling, store the jars of thick pitted cherry jam in a cool place. Enjoy your winter treat!
