Cheeseburger Pie
The world-famous cheeseburger in a new form! The same sesame bun, beef patty, pickled cucumbers, and of course cheese, but now in one large pie. This pie can feed the whole family: it is filling and tasty. Or you can cut it into portions and take it with you as a snack.

Preparation
Step 1
Prepare the ingredients. For the dough, use all-purpose flour, a large egg, and instant dry yeast. For the filling, use ground beef, as in a real cheeseburger, though you can replace it with pork if you like. Use a firm cheese, such as a mild semi-hard cheese. Do not use Parmesan, Grana Padano, or cheeses with a very strong unusual flavor, as they will not fit here. White sesame seeds are used for topping.
Step 2
Warm the milk until lukewarm, about 30°C (86°F), and pour it into a bowl for kneading the dough. To activate the yeast, the milk must be warm but not hot, otherwise the yeast will die. Add the instant dry yeast and sugar to the bowl and stir until the dry ingredients dissolve completely in the warm milk. There should be no grains or lumps left in the milk. Set the bowl aside for 10-15 minutes so the starter can develop.
Step 3
After that time, crack the egg into the bowl, add the salt, and pour in the neutral vegetable oil, which will make the dough elastic. Whisk the contents of the bowl.
Step 4
Sift the flour through a sieve. This fills the flour with air, making the dough softer and more tender, and also removes any unwanted impurities. Begin adding the sifted flour in portions to the milk-and-egg mixture.
Step 5
First mix the dough with a spoon in the bowl. When it becomes thicker and comes together, knead it by hand on the work surface for about 7 minutes, dusting lightly with flour as needed. But do not overload the dough with flour. It should become soft and should not stick to your hands. Depending on the quality and grind of the flour, you may need a little less or a little more than the recipe states. Shape the dough into a ball, return it to the bowl, cover it with a clean towel, and leave it in a warm, draft-free place for 40-60 minutes.
Step 6
Put the ground meat into a preheated frying pan and, breaking up the lumps, fry it in vegetable oil until all the liquid has evaporated. Then turn the heat up to high and fry the meat for another 1-2 minutes, stirring constantly. While frying, season the meat filling with salt and pepper. When the filling is ready, remove the pan from the heat and leave it aside to cool.
Step 7
Peel the onion, rinse it, and cut it into small cubes. Pour boiling water over the onion cubes to remove the bitterness. Drain them in a colander and let all the liquid run off. If you prepare the onion this way, it will stay slightly crisp in the finished pie, just like in a cheeseburger. If you prefer softer onion, you can fry it in a pan until tender.
Step 8
By this time the dough should have risen. Punch down the rested dough and divide it into 2 parts in the following ratio: 1/4 and 3/4. Take the larger part and roll it into a large circle. Carefully transfer the dough into a baking pan greased with vegetable oil, shaping the base and sides of the pie. For this pie, use a small pan about 20 cm (8 inches) in diameter.
Step 9
Spread the cooled meat filling as the first layer and level it out. Brush the meat filling with a layer of ketchup. Then add the prepared onion, distributing it evenly over the whole pie.
Step 10
Cut the pickled cucumbers into slices and arrange them in a single layer over the whole diameter of the pie.
Step 11
Grate the cheese coarsely and distribute it evenly over the whole pie. There is no need to grate it finely, because in the high heat of the oven it will melt anyway, regardless of whether you used a coarse or fine grater.
Step 12
Roll out the smaller part of the dough into a circle and cover the pie with it. Fold and seal the edges together. Brush the top of the pie with milk using a pastry brush and sprinkle with sesame seeds. Make several holes in the pie with a fork. Bake in a preheated oven at 180°C (350°F) for 30-40 minutes. The baking time and temperature may vary depending on your oven.
