Preparation
Step 1
Prepare the ingredients. Since cheese is the main ingredient, choose a good-quality melted cheese. Use good-quality sausages as well. Wash and peel the vegetables beforehand.
Step 2
Cut the onion into small cubes.
Step 3
Coarsely grate the carrot.
Step 4
Remove the sausages from their packaging and cut them into thin rounds.
Step 5
Cut the potatoes into medium-sized cubes or sticks. Pour clean cold water into a saucepan, add the potatoes and place over medium heat.
Step 6
At the same time, heat a frying pan over low to medium heat and add the vegetable oil. Add the onion and carrot and cook, stirring, for a couple of minutes. Add the sausages and cook everything together for another 5 minutes.
Step 7
When the potatoes come to a boil, skim off any foam and add a little salt, keeping in mind that the cheese is already salty. Cook the potatoes for 10 minutes, then add the sautéed vegetables and sausages.
Step 8
Add the melted cheese. Cook the soup, stirring, for another 10 minutes or until the potatoes are tender and the cheese has completely melted into the broth. Taste and add more salt if needed.
Step 9
Serve the cheese soup hot, adding chopped fresh herbs if desired.
