Prepare all the ingredients for the champignon and carrot salad.
Step 2
To make the dressing, place 2 pressed garlic cloves in a small bowl. Add ½ teaspoon salt and 1 tablespoon sugar.
Step 3
Add 7 g of Korean-style carrot seasoning. If you do not have it, use a mixture of black and red pepper, basil and ground coriander. Mix the dry ingredients well.
Step 4
Pour 70 ml, or about ¼ cup plus 1 tablespoon, of vegetable oil into the bowl.
Step 5
Add 70 ml, or about ¼ cup plus 1 tablespoon, of 6% table vinegar.
Step 6
Mix all the dressing ingredients thoroughly and leave to infuse briefly.
Step 7
Grate 1 medium carrot using a Korean-style carrot grater. If you do not have one, use a regular coarse grater.
Step 8
Cut 500 g, or about 1.1 lb, of champignons into medium-size pieces and place them in a saucepan. Pour in 1.5 liters, or about 6⅓ cups, of boiling water.
Step 9
Add ¼ teaspoon salt and bring to a boil over high heat. Cook the mushrooms for 3–4 minutes.

Transfer the cooked mushrooms to a large bowl.
Step 12
Add the grated carrot to the mushrooms.
Step 13
Pour the prepared dressing over the mushrooms and carrot.
Step 14
