Cauliflower with Tomatoes

Step 1
How to make cauliflower with tomatoes? It’s very easy! First, prepare all the ingredients. The cauliflower can be fresh or frozen. Tomatoes can be fresh or canned in their own juice. I used frozen cauliflower and fresh tomatoes. Break the cauliflower into small florets. Peel the onion and garlic and rinse them.
Step 2
Bring water to a boil in a pot. Add the cauliflower to the boiling water and blanch for 30-40 seconds (or a little longer if the pieces are large). Drain the florets in a colander.
Step 3
Rinse the tomatoes and pat dry with paper towels. If you like, peel them first. Cut the tomatoes into large cubes.
Step 4
Heat vegetable oil or olive oil in a skillet. Add the onion, cut into cubes or half-rings. Sauté over high heat, stirring, until golden.
Step 5
Add the cauliflower to the onion. Stir with a wooden spatula and sauté for a few more seconds.
Step 6
Add the tomatoes and stir.

Salt to taste. At this stage you can add your favorite spices. I used ground red paprika and thyme. Stir, cover with a lid, reduce heat to medium, and simmer for 7-10 minutes. Open the lid occasionally and stir. The tomatoes will release juice, so the cauliflower will simmer rather than fry. If there isn’t enough liquid, add a little boiling water.
Step 8
Sprinkle the finished dish with ground black pepper and finely chopped herbs. I used chives and parsley. Serve right away - it's delicious both hot and cold. Enjoy your meal!
