How do you make carrot salad with mayonnaise and garlic? Prepare all the necessary ingredients. It is best to use fresh carrots from the new harvest. Instead of fresh garlic, you can use garlic powder. The mayonnaise can be replaced with sour cream, yogurt, or even kefir or cultured baked milk.
Step 2
Wash the carrots well to remove any soil, trim off the tops, and peel them. Peel the skin thinly; it is convenient to do this with a vegetable peeler.

Dry the carrots with paper towels and grate them. You can use a fine grater, a medium grater, or a Korean-style carrot grater. In this matter, follow your own taste.

Salt the carrots. After about 5 minutes, the carrots will release juice. Do not pour it off. That juice is what makes the salad juicy.

Peel the garlic, mince it, and add it to the carrots. I pressed one clove through a garlic press, but you can also chop it with a knife or grate it on a fine grater. At this stage, you can add something else to the salad to your taste, such as fresh parsley, dill, cilantro, dried herbes de Provence, or simply ground pepper.

Add the mayonnaise.
