Caramel Oatmeal Cookies

Step 1
All the ingredients should be at room temperature. So before you start making the caramel oatmeal cookies, take the butter and the egg out of the refrigerator and leave them out for about 2 hours. To make the caramel oatmeal cookies, first pour boiling water over the raisins, leave them for a couple of minutes, rinse them well with water, and dry them with a kitchen towel.
Step 2
Grind the oats into a coarse flour using a food processor or blender. Do not grind them too finely.

In a bowl, mix the flour with the baking powder, salt, and cinnamon.

Mix the ground oats with the flour and the raisins.

Beat the butter, at room temperature, with the white and brown sugar. Add the egg and mix well with a mixer. Beat until the butter, egg, and sugar mixture becomes fluffy.

Add the flour and oat mixture to the butter, egg, and sugar mixture. Mix well.
Step 7
Put the dough into the refrigerator for 30 minutes to rest.
Step 8
Take the dough out of the refrigerator. Shape the dough into cookie balls with your hands.

This amount of dough makes about 12–15 cookies. Place the cookies on a baking sheet lined with parchment paper, leaving about 4–5 cm, about 1 1/2–2 inches, between them. If you are not sure about the quality of the parchment paper, it is better to grease it with butter so the cookies do not stick.

During baking, the cookies will spread on their own. That is why the balls should be placed apart so that their edges do not stick together. Now press the cookies down slightly on top.

Bake at 170°C (340°F) for about 20 minutes, until golden.

Take the finished cookies out of the oven and leave them to cool. Because the centers are very soft, they will firm up a little as the cookies cool.
