Preparation
Step 1
Begin by preparing the marinade. Blend together the cilantro, celery, scotch bonnet pepper, shallots, ginger, broth cube, salt, and white pepper until smooth.
Step 2
Coat the chicken with half of the marinade and leave it to marinate for at least 30 minutes to absorb the flavors.
Step 3
While the chicken marinates, peel the plantains and slice them into 1 cm thick rounds, similar to coins. Fry them until golden brown on both sides, being careful not to overcook. Keep in mind that unripe plantains may appear darker when fried.
Step 4
Place the marinated chicken pieces under a hot broiler and cook until they are golden brown. There is no need to turn them, as the pieces are small.
Step 5
Blend the tomatoes until smooth and set aside.
Step 6
In a pot, sauté the onions over medium heat for about 5 minutes, until they become soft and translucent. Add the blended tomatoes and increase the heat to high. Cook, stirring occasionally, until the tomatoes reduce and thicken.
Step 7
Add the remaining half of the marinade and continue cooking on low-medium heat for 5 minutes, allowing the sauce to deepen in flavor.
Step 8
Stir in the carrots and cook for 5 minutes, then add the fried plantains, broiled chicken, and bell peppers. Cook everything together for another 5 minutes, until well combined and heated through.
Step 9
Serve warm.
