Cafeteria-Style Carrot Salad
Extremely simple, very tasty, and healthy! Cafeteria-style carrot salad is often found in French restaurants. It’s a great alternative to Korean-style carrot salads - light, flavorful, and perfect both for everyday meals and festive tables.

Step 1
Choose bright, juicy, sweet carrots - this determines the flavor. Peel them. The clean carrot weight should be about 450 g (I used one large and two small carrots).
Step 2
Prepare the dressing. Squeeze the juice from half a lemon and remove any seeds.
Step 3
In a small bowl, pour 2 tablespoons of olive oil (or any neutral vegetable oil). Add liquid honey, lemon juice, and mustard. I used mild prepared mustard, but Dijon also works. Add salt and pepper to taste. Mix well - the dressing is ready.
Step 4
Grate the peeled carrots using a Korean-style grater. Alternatively, use a medium or coarse grater; the main thing is that the shreds are thin.
Step 5
Rinse and finely chop parsley or any herbs of your choice.
Step 6
Transfer the grated carrots into a bowl, add the chopped herbs, pour the dressing over the top, and mix well with a fork or with your hands.
Step 7
Serve immediately. This salad does not require resting time. Enjoy!
