Cabbage Soup with Napa Cabbage

Step 1
Start making the cabbage soup by cooking the broth. Pour the required amount of water into a pot and, covering it with a lid, bring it to a boil.
Step 2
Lightly salt the water. Put the pork ribs into the boiling salted water. You can also add the ribs to cold water and bring everything to a boil together, but then more foam will form. Skim the foam from the broth and reduce the heat under the pot. Cook for 30 minutes, covered, over medium heat.
Step 3
Finely chop the onion and carrot. Pour vegetable oil into a preheated skillet and add the chopped onion and carrot. Fry for about 5 minutes, stirring occasionally.
Step 4
When the onion turns yellow and the carrot releases its juices, add the tomato paste to the skillet. Instead of tomato paste, you can use chopped tomato. Add a little salt and pepper. Stir and leave everything to simmer together for another 10 minutes over low heat. It is better to cover the skillet with a lid.
Step 5
Take the ribs out of the pot with the broth. Carefully, so you do not burn yourself, cut the meat off the ribs. Chop it and return it to the pot.
Step 6
Cut the peeled potatoes into cubes and add them to the broth.
Step 7
After 10 minutes, add the stewed onion and carrot to the pot with the soup. Cook everything for another 10 minutes.
Step 8
Finely shred the cabbage. Napa cabbage is very tender, so it does not need to cook for long. Add the chopped Napa cabbage to the pot 5 minutes before the soup is done.
Step 9
Add salt, pepper, and a bay leaf. You can also add your favorite spices.
Step 10
Serve the finished cabbage soup with Napa cabbage hot, with herbs and sour cream. But some people also enjoy it cold.
