Preparation
Step 1
How to make buckwheat with meatballs in the oven? Prepare all ingredients. What minced meat to use? Any kind works - chicken, pork, beef, or a mixture. I used store-bought pork mince.
Step 2
Peel and rinse the onion and garlic. I had small onions, so I used three.
Step 3
Dice the onion finely. Add half of the chopped onion to the meat and set the rest aside. Grate or press the garlic and add it to the mince. Mix well.
Step 4
Add salt and ground black pepper to taste. You may also add your favorite spices - paprika, smoked pepper, Italian herbs, basil, oregano, etc. Mix again thoroughly and let the mince rest for 5-10 minutes.
Step 5
Meanwhile, prepare the buckwheat. Rinse it several times in clean water and drain. Put the buckwheat into a baking dish. Add the remaining onion and vegetable oil. Salt to taste.
Step 6
Mix everything.
Step 7
Shape the mince into evenly sized meatballs.
Step 8
Place the meatballs on top of the buckwheat. Add water. How much water is needed? The ratio is: 1 part buckwheat to 2 parts water. For example, 1 cup buckwheat requires 2 cups water. The water may come close to the rim of the dish - don’t worry, the grain will absorb it during cooking. Cover the dish with foil.
Step 9
Bake in a preheated 200°C (about 390°F) oven for 30-40 minutes. Then remove the foil and continue baking until fully cooked (10-20 minutes). Time and temperature may vary depending on your oven. Remove and sprinkle with fresh herbs.
Step 10
Done! Serve hot.
