Broken Glass Jelly Cake with Sour Cream
No flour - only a delicate sour cream mousse and bright cubes of fruity jelly! This colorful cake is easy to prepare and looks impressive. The slight tartness of the different jellies balances the sweetness beautifully.

Preparation
Step 1
Prepare the ingredients. Use jelly powders in any colors and flavors you like, such as orange, mango, kiwi and cherry. Choose thick sour cream with a fat content of at least 20%.
Step 2
Divide the jelly powders among 4 separate glasses or bowls. Pour ⅔ cup of boiling water into each one while stirring constantly. Mix thoroughly until the powder has completely dissolved. Pour the different-colored jellies into separate molds and refrigerate for 4–6 hours, until completely set.
Step 3
Carefully remove the set jellies from the molds and cut them into small cubes. Return the jelly cubes to the refrigerator while preparing the sour cream mixture.
Step 4
Pour the cold water over the gelatin and leave it to bloom for approximately 20 minutes. Heat gently over low heat or in the microwave until completely dissolved. Do not boil. Leave the dissolved gelatin to cool slightly.
Step 5
Combine the sour cream, sugar and vanilla in a bowl. Leave the mixture briefly, stirring occasionally, until the sugar has dissolved. While stirring vigorously and continuously, gradually pour the gelatin into the sour cream mixture.
Step 6
Place a few assorted jelly cubes in the bottom of an 8-inch silicone cake mold. Pour over some of the sour cream mixture. Continue alternating the jelly cubes and sour cream mixture until all the ingredients have been used.
Step 7
Refrigerate the filled mold for 8–9 hours or overnight, until the cake has completely set. Before serving, invert the cake onto a serving plate and carefully remove the mold.
Step 8
Serve the Broken Glass Jelly Cake on a flat plate to highlight its colorful layers. If desired, serve it with a scoop of vanilla ice cream or drizzle it with melted white chocolate.
