Broccoli and Chicken Soup
Original, wholesome, beautiful, and appetizing! Broccoli and chicken soup is a version of chicken cabbage soup in which the usual white cabbage is replaced with broccoli. This change only improves the soup, both in flavor and in appearance, thanks to the bright green florets.

Step 1
How do you make broccoli and chicken soup? Prepare all the necessary ingredients. You can use any parts of the chicken: thighs, fillet, drumsticks, or wings. The main thing is that the poultry has enough meat and bones for a rich broth. If the meat was frozen, thaw it first by moving it from the freezer to the bottom shelf of the refrigerator. Wash and peel the potatoes, carrot, onion, and garlic clove.

Rinse the chicken thoroughly and pat it dry. You can cut it into portion-sized pieces right away or do it later, once the chicken is cooked, before adding the vegetables.
Step 3
Place the chicken, the whole onion, and the garlic clove into a pot. Pour in 2 liters, about 8 1/2 cups, of water. Put the pot over high heat. Bring the water to a boil and skim off the foam with a slotted spoon. Then reduce the heat to medium and cook the chicken for 40 minutes until done, skimming off the foam from time to time.
Step 4
You can use either fresh or frozen broccoli. If you have fresh broccoli, separate the florets from the stalk and rinse them thoroughly in cold water. If you use frozen broccoli florets, do not thaw them beforehand.

Grate the carrot on a coarse grater or cut it into thin strips.

Cut the potatoes into medium cubes.
Step 7
Add the potato cubes, grated carrot, and broccoli florets to the pot with the broth.
Step 8
Bring the broth to a boil again and cook everything together for about 20 more minutes over medium heat until the vegetables are done. Check using the potatoes - the pieces should break easily when pressed with a spoon. At the end, season the soup with salt and pepper. Remove the onion and garlic clove and discard them.

Cover the pot with a lid and let the soup stand for about 15 minutes.
