Breaded Chicken Breast Schnitzel
A simple yet wonderfully flavorful and filling dinner! Properly prepared breaded chicken breast stays juicy inside while developing a crisp golden crust. Serve it on its own, with fresh vegetables or your favorite side dish.

Preparation
Step 1
Rinse the chicken fillet under running water and pat it dry with paper towels. Cut it lengthwise without slicing all the way through, then open it out into one large, thin piece.
Step 2
Place the chicken on a cutting board and cover it with plastic wrap. Pound it evenly with a meat mallet. The plastic wrap will help prevent the edges from tearing and keep splashes contained.
Step 3
Prepare 3 shallow dishes. Crack the egg into the first one, add a little salt and pepper and whisk well. Place the flour in the second dish and the breadcrumbs in the third.
Step 4
Coat the chicken in flour, making sure it is covered on all sides. Dip it into the beaten egg, coating both sides. The flour will help the egg adhere to the meat.
Step 5
Coat the chicken thoroughly in breadcrumbs. Press it firmly into the crumbs to form an even, substantial layer.
Step 6
Pour a little vegetable oil into a frying pan and heat well. Add the chicken schnitzel and cook over high heat for 1–2 minutes on each side, until golden.
Step 7
Reduce the heat and cook for another 3–4 minutes on each side. Do not cover the pan, as the coating should remain crisp. Serve the chicken schnitzel on its own or with fresh vegetables or your favorite side dish.
