Preparation
Step 1
How to make braised beef with carrots and onions in a skillet? Prepare the ingredients. You can use beef from any cut: tenderloin, shoulder, or back. Of course, the dish will be best from fresh meat, and the most tender from tenderloin (with minimal sinew and membrane, boneless). If your meat is frozen, thaw it ahead of time on the bottom shelf of the refrigerator.
Step 2
You can increase or decrease the vegetables to taste, although onions definitely won’t ruin the beef. Peel the onion, rinse, pat dry, and slice into half-rings. If you like, use sweet purple onion.
Step 3
Rinse the beef well, remove sinews and membranes, and cut into small cubes. You can add pork fat - it will make the dish more tender, though slightly fattier. Use a heavy-bottomed skillet with high sides and a lid. Place the skillet on the stove.
Step 4
Put the beef into the skillet and pour in 1 cup (240 ml) of water. Add a bay leaf and allspice peppercorns. Bring the broth to a boil, reduce the heat to medium, and braise the meat under a lid for about 40 minutes. By then, almost all the liquid will have evaporated.
Step 5
Add the onion and carrots to the skillet with the meat. Pour in vegetable oil and add spices: salt to taste, ground black pepper, and hot red pepper. Add a little water if there isn’t much liquid - so it comes about halfway up the contents - and braise for another 15-25 minutes, until the meat is tender. Adjust to your stove. Turn off the heat. There should be broth left at the bottom of the skillet.
Step 6
Serve the meat as a main dish, spooning the skillet broth over it, or with a side. Beef with carrots is delicious with mashed potatoes, pasta, grains, or with fresh vegetables or a salad. Enjoy!
