Braised Beef Heart with Vegetables
A delicious, hearty, and healthy dinner for the whole family! Braised beef heart with vegetables turns out incredibly appetizing and colorful. You can serve it as a main dish or with rice, buckwheat, or mashed potatoes.

Preparation
Step 1
If your beef heart is frozen, take it out of the freezer in advance and let it thaw at room temperature.

Cut the heart into small cubes, about ½ inch (1 cm) in size.

Peel the onion, carrot, and garlic. Cut the bell pepper in half and remove the core and seeds. Rinse all the vegetables and herbs under cold running water, then pat them dry with paper towels.
Step 4
Slice the carrot into sticks or rounds (or grate it coarsely, if you prefer). Cut the onion in half, then each half into quarters, and slice into quarter rings. Chop each garlic clove into 4-6 pieces and dice the bell pepper into small cubes.
Step 5
Heat a little refined vegetable oil in a heavy-bottomed skillet. Add the onion, carrot, pepper, and garlic. Sauté, stirring, until the onion becomes translucent.
Step 6
Meanwhile, dice the tomatoes. If desired, peel them by pouring boiling water over them, letting them sit for a minute, draining, and then removing the skin easily - though this step is optional.
Step 7
Add the beef heart to the skillet with the vegetables.

Then add the tomatoes.
Step 9
Season with salt to taste, add your favorite dried herbs, stir well, and cover with a lid.
Step 10
Reduce the heat to low and simmer until the heart is tender. Occasionally lift the lid to check that it’s not burning; add a little boiling water if needed. Usually, the tomato juice provides enough liquid for braising. Finely chop the herbs and sprinkle them over the finished dish.

Let the beef heart with vegetables rest for a few minutes, then serve hot.
