Preparation
Step 1
Prepare all the ingredients. Use unrefined sunflower oil for a more pronounced flavor.
Step 2
Boil the potatoes. Place the potatoes in a suitable saucepan, cover with cold water and bring to a boil over high heat. Reduce the heat to medium, partially cover and cook until tender, about 10–20 minutes depending on their size and variety.
Step 3
Check the potatoes for doneness with a toothpick or thin knife. Drain the water, let the potatoes cool and peel them.
Step 4
Prepare the dressing. In a small deep bowl, combine the unrefined sunflower oil, wine vinegar and ground allspice.
Step 5
Peel the onion. Red onion works especially well, but regular yellow onion can also be used. Cut it into thin half-rings or quarter-rings and add to the dressing.
Step 6
Mix thoroughly and leave for 5–10 minutes so the onion can marinate and absorb the flavors of the dressing.
Step 7
Cut the cooled potatoes into small cubes or sticks. Do not cut them too finely so they keep their shape. Place in a large salad bowl and season with salt to taste.
Step 8
Add the marinated onion together with the oil and vinegar dressing.
Step 9
Rinse and dry the fresh herbs, then finely chop them. Green onions, dill and garlic greens work well.
Step 10
Mix everything thoroughly and let the salad stand for about 10 minutes. Taste and add more salt if needed.
Step 11
Serve the potato salad.
