Boiled Pork Fat with Garlic
Tender, incredibly tasty, and wonderfully aromatic! Boiled pork fat with garlic makes a perfect quick snack. It’s great with a slice of fresh bread or as a savory addition to soups and borscht. Experiment with different spices for a new flavor every time!

Preparation
Step 1
To prepare boiled pork fat with garlic, gather all the ingredients listed in the recipe. Choose pork fat with meat layers - it will be much tastier. Adjust the amount of garlic to your liking.
Step 2
Rinse the pork fat under cold water and cut it into small, serving-size pieces.
Step 3
Place the pieces into a pot, add bay leaves, black peppercorns, cloves, juniper berries, and salt (about 4 tablespoons of fine salt without a heap).
Step 4
Pour in enough cold water to fully cover the fat. Bring to a boil over high heat, skim off any foam, reduce the heat to low, and simmer for 30-40 minutes. Check doneness by piercing the meaty part with a thin knife - if it goes in easily, it’s ready.
Step 5
Remove the pork fat from the pot and let it cool completely. To prevent it from drying out, cover it with a plate or plastic wrap.
Step 6
While it cools, prepare the spice rub. Peel the garlic, grate it finely, or press it through a garlic press. Mix it with ground black or allspice pepper, coriander, and paprika. You can also add dry adjika, Svan salt, or Adyghe salt - choose any blend to taste.

Rub each piece of boiled pork fat thoroughly with the aromatic spice mixture.
Step 8
Wrap each piece tightly in plastic wrap and store in the refrigerator. It will be ready to eat in 24 hours. For longer storage, place the pieces in the freezer - they’ll keep for 1-2 months or more.
