Boiled Pork Belly in Onion Skins (Pot-Cooked)
Plainly simple, yet so tasty! You haven’t had pork belly like this before! Aromatic pork belly cooked in onion skins is very easy to make, and it tastes as if someone lightly smoked it. A delicious snack the whole family will enjoy. And if you cook a pot of borscht too, it’s a true feast.

Preparation
Step 1
How to boil pork belly in onion skins? Prepare everything you need. Onion skins are very light, almost weightless, so 1-2 handfuls are enough. The more onion skins you use, the deeper the color of the finished pork belly will be.
Step 2
Choose pork belly with more meat. I got an ideal balance of meat and fat. Rinse the pork belly under running water and cut into 2-3 pieces. Make the pieces small enough to fit into your pot.
Step 3
Rinse the onion skins several times in water to wash off any dust that may be on them. Use a dark-colored pot, because onion skins can stain a light pot and it will be hard to clean. Put the onion skins into the pot and pour in cold water. Add salt and whole peppercorns. Put the pot on the heat and bring to a boil.
Step 4
Peel the garlic and cut it into pieces. Add the chopped garlic to the pot.
Step 5
Then place the prepared pork belly into the boiling onion broth and return to the heat. The pork belly should be fully submerged; add a little water if needed. We add it to boiling water so the juices don’t escape into the broth - the meat, so to speak, “seals” in the hot water. Bring back to a boil and simmer over low heat for 1 to 1.5 hours. The cooking time depends on the size of the pieces.

Let the cooked pork belly cool in the onion broth. Then remove the cooled pork belly onto a paper towel to blot excess moisture. Wrap in plastic wrap and refrigerate for a couple of hours.
Step 7
The pork belly is ready! It turns an appetizing color and flavor. Serve it as a festive meat appetizer or simply make sandwiches with it. Enjoy!
