Beef Aspic with Gelatin
A simple, filling, low-calorie appetizer for any celebration! This beef aspic with gelatin is special because the meat doesn’t need to be boiled: bones and vegetables are enough for the broth, while the beef is baked in the oven, keeping its flavor and aroma. The result is truly exceptional!

Preparation
Step 1
How to make classic homemade beef aspic with gelatin? Prepare all ingredients. You can replace the beef shoulder with another cut (for example, round, neck, etc.).

Cut the celery root in half.
Step 3
Rinse the meat and separate it from the bones. Put the beef bones, peeled onion, carrot, and celery into a pot. Add allspice peas and garlic. Pour in water. Bring the broth to a boil and simmer gently, skimming foam, for about 1 hour.
Step 4
After 30 minutes from the start of simmering, add sprigs of dill and parsley and salt to the broth.
Step 5
While the broth is cooking, cut the beef into large pieces.
Step 6
Place the meat in a baking dish lined with foil and put it into an oven preheated to 180°C / 356°F. Bake for about 50 minutes (or longer) until done. The exact time depends on your oven, the size of the pieces, and the cut. To keep the meat from drying out, cover the dish with foil. If you prefer, you can boil the meat with the vegetables instead: in 3 L of water, cook for 1.5-2 hours until tender.
Step 7
Pour 100 ml (about ⅓ cup + 1 tbsp) cold water over the gelatin and let it bloom for 10 minutes.
Step 8
Strain the broth and return it to medium heat.
Step 9
Add the bloomed gelatin to the hot broth and stir until fully dissolved. Do not bring to a boil.
Step 10
Pour a thin layer of gelatin broth into aspic molds and refrigerate for 2 hours to set.
Step 11
Chop the baked beef into small pieces or pull it into fibers by hand. If you like, season it with salt and pepper.
Step 12
Spread the meat over the set broth. Pour the remaining broth on top. If desired, decorate with cooked carrots. Refrigerate for 6-8 hours until fully set. Enjoy!
