Bean Soup with Meat

Step 1
How do you cook bean soup with beef and potatoes? Prepare the necessary ingredients. The beef can be replaced with veal or lamb.
Step 2
Before you start cooking the soup, prepare the beans in advance. Cover the legumes with cold water in the evening and leave them to soak overnight.
Step 3
Place the meat in a pot. Add a medium-sized onion and a celery stalk to get a richer, tastier, and more wholesome broth. Pour in 2 liters / about 8 1/2 cups cold water and place over high heat with the lid on.
Step 4
Drain the water from the beans. In a separate small saucepan, boil the beans until tender. This will take about 50–60 minutes.
Step 5
Once the water in the pot with the meat comes to a boil, remove the foam that forms using a large spoon. Add salt to taste, reduce the heat to medium, and cook the meat with the lid slightly ajar for at least 1 1/2 hours, until the meat becomes tender.
Step 6
Drain the cooked beans in a colander.
Step 7
Remove the cooked meat from the broth. Discard the onion and celery. If desired, you can strain the broth.
Step 8
Prepare the vegetables. Peel the onion, carrot, and potatoes, then rinse them under running water. Cut the carrot and onion into small pieces. The carrot can also be grated.
Step 9
Cut the potatoes into small cubes.
Step 10
Return the pot with the broth to high heat and add the beans, potatoes, tomato sauce, onion, and carrot.
Step 11
Stir the contents of the pot and, if desired, add a bay leaf. Once it comes to a boil, cook the soup over medium heat until the potatoes are tender. This will take about 15–20 minutes.

Cut the slightly cooled meat into medium-sized pieces.

When the soup is ready, turn the heat under the pot to the highest setting. Add the chopped meat and finely chopped herbs to the pot.
Step 14
If desired, add chopped garlic or garlic pressed through a garlic press. As soon as the first signs of boiling appear, turn off the heat, cover the pot with a lid, and leave the soup to infuse for a while.
Step 15
When serving the bean soup with meat, you can garnish it with a sprig of fresh herbs and sprinkle it with allspice.
