Bean and Cabbage Salad
Fresh, colorful and wonderfully juicy, without mayonnaise! This easy bean and cabbage salad is made from simple ingredients and comes together quickly. The beans make it filling enough for a light dinner.

Preparation
Step 1
Prepare the ingredients. For a brighter and more colorful salad, use both white and red cabbage.
Step 2
Peel and rinse the onion. You can use regular onion, red onion or a mixture of both. Cut it into thin half-rings, place it in a small deep bowl and sprinkle with a pinch of sugar, adjusting the amount to taste.
Step 3
Pour the wine vinegar over the onion, mix well and leave it to marinate while preparing the remaining ingredients.
Step 4
Remove any damaged outer leaves from the white cabbage, rinse and dry it, then shred it finely and place it in a large salad bowl.
Step 5
Prepare the red cabbage in the same way, shredding it finely and adding it to the bowl.
Step 6
Peel and rinse the carrot, then grate it into long thin strips and add it to the cabbage.
Step 7
Cut the bell pepper in half, remove the stem and seeds, then slice it into thin half-rings and add it to the bowl.
Step 8
Drain the canned beans thoroughly, then add them to the salad together with the marinated onion.
Step 9
To make the dressing, mix the mustard and olive oil until smooth. You can replace the olive oil with refined sunflower oil and adjust the amounts of oil and mustard to taste.
Step 10
Pour the dressing over the salad and season with salt and ground black pepper. Rinse, dry and finely chop the herbs, then add them to the bowl. Parsley, chives or dill will all work well.
Step 11
Mix the salad thoroughly and serve immediately, or refrigerate it for at least 30 minutes so the flavors can blend.
