Preparation
Step 1
Prepare the ingredients. Instead of boiled chicken, you can use smoked, fried or roasted chicken. Turkey or another type of meat will also work. Pickled cucumbers can be replaced with fresh or salted cucumbers. Use large eggs; if yours are small, use 4 so there is enough egg white for the top layer.
Step 2
Boil the chicken fillet in salted water for about 25 minutes, until fully cooked. Let it cool, pat dry and cut into small pieces.
Step 3
Boil the carrot in its skin until tender, then cool, peel and coarsely grate. Make sure all cooked ingredients are completely cooled before assembling the salad.
Step 4
Cut the pickled cucumbers into small cubes.
Step 5
Coarsely grate the cheese. Use a hard or semi-hard cheese; a simple semi-hard fermented cheese works well.
Step 6
Hard-boil the eggs, cool and peel them. Separate the whites from the yolks and coarsely grate the whites.
Step 7
Crumble the egg yolks directly into the grated cheese and mix well.
Step 8
Remove the seeds from the pomegranate and set them aside for decorating.
Step 9
Arrange the chicken fillet on a serving plate in an even round layer. Spread or drizzle with mayonnaise.
Step 10
Add a layer of pickled cucumbers and spread with mayonnaise.
Step 11
Add the grated carrot as the next layer and spread with mayonnaise.
Step 12
Spread the cheese and egg yolk mixture over the carrot, then add the final layer of mayonnaise.
Step 13
Cover the entire surface evenly with the grated egg whites so none of the previous layer shows through. The salad should look like a smooth white mound of snow.
Step 14
Decorate the salad with pomegranate seeds to resemble strings of beads. If serving on a white plate, you can also arrange pomegranate seeds around the edge for contrast. Refrigerate for 1 hour before serving.
