Banana Mug Cake in the Microwave
This soft banana mug cake is ready in about 10 minutes and requires only a few simple ingredients. The batter can be mixed with an ordinary fork, making it an especially convenient quick dessert.

Preparation
Step 1
Prepare the ingredients. Use a very ripe or even overripe banana, as it will be softer and more aromatic. You can replace the honey with regular sugar, adjusting the amount to taste.

You can mix the batter directly in the mug you will use for cooking, but choose a large one because the cake rises considerably. Alternatively, mix it in a separate bowl. Peel the banana, break it into small pieces and mash with a fork until mostly smooth. A few small banana pieces can remain.
Step 3
Add the egg to the mashed banana and mix thoroughly with a fork.
Step 4
Pour in the milk and add the honey. If the honey is thick or crystallized, warm it briefly until more fluid, then mix everything together.
Step 5
Mix the flour with the baking powder. Sift it if convenient, then add it to the batter in portions, mixing after each addition until no lumps remain. The batter should have the consistency of pourable sour cream; do not make it too thick or the cake may turn out dry. You may need slightly more or less flour than stated.
Step 6
Pour the batter into a large microwave-safe mug. The original recipe uses a mug of approximately 12½ fl oz. You can also divide the batter between 2 smaller mugs. Do not fill narrow mugs more than about two-thirds full, as the cake will rise during cooking.
Step 7
Microwave at 800 W for 2–4 minutes or longer if needed, depending on your microwave. Check for doneness with a wooden skewer inserted into the center; it should come out dry.
Step 8
Serve the banana mug cake warm, sprinkled with powdered sugar if desired.
