Banana Muffins
Tender, moist, aromatic - you want another right away! Banana muffins bake very quickly; great for tea or on the go. Thanks to ripe bananas, they have a rich flavor with a dense, moist crumb.

Step 1
How do you bake banana muffins in the oven? Prepare the ingredients. Choose ripe bananas with dark skin and spots - they’re softer and more fragrant. Take the butter out of the fridge in advance so it softens well. Be sure to add a pinch of salt - it highlights the flavor. A tiny pinch of vanillin is enough; it’s very strong. Preheat the oven to 180°C / 356°F.
Step 2
Put the softened butter and sugar into a bowl. Beat with a mixer until light and fluffy.

Add the eggs one at a time.
Step 4
After each egg, mix until smooth using a silicone spatula. You should get a glossy, fairly runny mixture.
Step 5
Peel the bananas and grate them. It’s best to do this right before adding to the batter because bananas darken quickly. You can mash them with a fork, but grating gives a smoother mixture. I don’t recommend using an immersion blender - the bananas turn into an unappealing gray mass, and the muffins won’t look as nice. Also, small banana pieces look prettier in the cut.
Step 6
Add the grated bananas to the batter. Mix.
Step 7
Sift the flour into the butter mixture. Sift in the baking powder as well. Add a pinch of salt and the vanillin.

Mix with a spatula until smooth.
Step 9
Take a muffin tin. Mine is silicone, so it doesn’t need greasing. I also used paper liners so the muffins are easier to remove. Spoon the batter into the cups, filling them about 2/3 full - the muffins will rise as they bake.
Step 10
From this amount, I got 12 muffins (about 7×4 cm / roughly 2.8×1.6 in). For stability, I placed the muffin pan on a baking sheet.
Step 11
Bake in the preheated 180°C / 356°F oven, top/bottom heat, for about 25 minutes. Exact time and temperature depend on your oven. Go by color - they should turn golden. Cool the muffins and remove them from the pan. Enjoy your tea!
