Banana bread
Moist banana loaf with chocolate chips, baked until golden. It is a simple, indulgent treat for any day.

Preparation
Step 1
Preheat the oven to 160C. Grease and line a 450g/1lb loaf tin with baking paper.
Step 2
Place the peeled banana in a mixing bowl and mash thoroughly with a fork. Add all of the remaining cake ingredients, except the chocolate chips, and beat with an electric hand whisk until the mixture is smooth and evenly combined.
Step 3
Fold in the chocolate chips, then spoon the batter into the prepared loaf tin and level the surface.
Step 4
Bake for 40-45 minutes, or until the loaf is well risen, golden-brown, and beginning to shrink away from the sides of the tin.
Step 5
Leave the cake to cool in the tin for 10 minutes, then turn it out and transfer to a wire rack to cool completely.
Step 6
Once cooled - slice and serve.
