Step 2
To prepare the yeast base, pour 150 ml / about 2/3 cup warm boiled water and 150 ml / about 2/3 cup warm milk into a measuring cup.
Step 3
Add 2 teaspoons of dry yeast to the cup.
Step 4
Add 2 tablespoons of sugar, mix all the ingredients with a whisk, and set aside for 15 minutes to activate the yeast.
Step 5
Crack 1 chicken egg into a large bowl.
Step 6
Pour 50 ml / about 3 tablespoons vegetable oil into the bowl.
Step 7
Add 1 teaspoon of salt to the bowl with the egg and vegetable oil.
Step 8
Whisk all the ingredients in the bowl well, breaking up the egg whites.
Step 9
Add the activated yeast to the bowl with the egg mixture and mix all the ingredients well.
Step 10
Sift 600 g / about 4 3/4 cups flour into the bowl with the liquid base in parts.
Step 11
Mix the flour and liquid base well with a whisk, then gather the dough into a ball with your hands.
Step 12
Sift a little flour onto the table and place the dough on it.
Step 13
Knead the dough thoroughly by hand for at least 7 minutes.
Step 14
Grease the dough with a small amount of vegetable oil.
Step 15
Place the dough in a bowl, cover it with a napkin, and leave it for 1 hour.
Step 16
Prepare the filling in advance. It consists of cabbage stewed with vegetables, mashed potatoes, and mild milk sausages.
Step 17
After the time has passed, place the well-risen dough on the table.
Step 18
Punch down the dough well to remove excess carbon dioxide and enrich it with oxygen.
Step 19
Knead and shape the dough into a sausage shape, then divide it into roughly equal-sized pieces.
Step 20
Shape the pieces of dough into 12 balls and place them on the table.
Step 21
Beat 1 chicken egg in a cup and add it to the plate with the stewed cabbage so the filling holds together well inside the hand pies.
Step 22
Mix the stewed cabbage well with the beaten egg.
Step 23
Flatten each dough ball into a round about 1/2 cm / about 1/4 inch thick.
Step 24
Place the desired amount of mashed potatoes on each round.
Step 25
Place the desired amount of cabbage on each round.
Step 26
Add 1 mild milk sausage to each round.
Step 27
Pinch the edges of each round together well and shape the hand pies.
Step 28
Place the shaped hand pies on a baking sheet and leave them to proof for 25 minutes.
Step 29
After the time has passed, brush the hand pies with beaten egg and place the baking sheet in an oven preheated to 170°C / 338°F for 25 minutes.
Step 30
After 25 minutes, remove the baking sheet from the oven, let the cooked hand pies cool slightly, and transfer them to a plate. Enjoy!
