Baked Pork and Potatoes with Mayonnaise
A simple and satisfying meal made from everyday ingredients. Pork, potatoes, carrots and onions bake together under mayonnaise until tender and juicy. Add cheese or mushrooms if desired, or use chicken or beef instead of pork.

Preparation
Step 1
Prepare the ingredients. You can replace the pork with another type of meat, keeping in mind that the cooking time will vary.
Step 2
Peel the onion and cut it into half-rings.
Step 3
Pat the pork dry, cut it into small thin pieces and lightly pound the meat.
Step 4
Combine the onion, pork and mayonnaise in a bowl. Season with salt and ground black pepper, mix thoroughly and leave to marinate in the refrigerator for a couple of hours.
Step 5
Peel the potatoes and cut them into thin rounds. If using older potatoes that take longer to cook, blanch them in boiling water for a couple of minutes beforehand.
Step 6
Peel the carrot and grate it coarsely.
Step 7
Grease a baking dish with vegetable oil and spread the marinated pork and onion over the bottom.
Step 8
Add the grated carrot as the next layer.
Step 9
Arrange the sliced potatoes on top and cover the baking dish with foil. Bake in an oven preheated to 350°F for approximately 40–50 minutes.
Step 10
Remove the dish from the oven and take off the foil. Spread mayonnaise over the potatoes and return to the oven for another 10–15 minutes, until golden and the pork and potatoes are completely cooked through. Sprinkle with freshly chopped herbs and serve hot.
