Preparation
Step 1
Prepare the ingredients. Fresh pink salmon works well, but frozen fish can also be used. If frozen, thaw it completely in the refrigerator beforehand. Use pink salmon fillets or steaks.
Step 2
Remove any scales from the pink salmon and pat the fish dry with paper towels. Arrange the pieces in a suitable baking dish and season with salt and pepper. Pour in enough water to cover the bottom of the dish by about ⅛–¼ inch.
Step 3
Peel the onion. Red onion works particularly well for a colorful presentation. Finely chop the fresh herbs, such as dill or parsley, and cut the onion into half-rings or quarter-rings.
Step 4
Arrange the sliced onion over the fish.
Step 5
Sprinkle the chopped fresh herbs evenly over the onion.
Step 6
Finely grate the cheese. Place one-third of it in a bowl, add the mayonnaise and mix thoroughly.
Step 7
Spread the cheese and mayonnaise mixture over each piece of pink salmon, then sprinkle evenly with the remaining grated cheese.
Step 8
Bake in a preheated oven until the fish is fully cooked. The original recipe bakes it at 390°F for about 25–30 minutes; adjust the time according to your oven and the thickness of the fish.
Step 9
Serve the pink salmon hot with fresh vegetables or cooked grains. It can also be served chilled.
