Preparation
Step 1
Prepare the ingredients. Use any ground meat you prefer, such as pork, beef or a mixture of different meats. The broccoli can be replaced with fresh or frozen green peas.
Step 2
Pour the milk into the ground meat and mix thoroughly until smooth. Cover and refrigerate for 1 hour. You can use store-bought ground meat or prepare it yourself by mincing the meat in a meat grinder or food processor.
Step 3
Rinse the broccoli, separate it into florets and cut into medium-sized pieces. You can use fresh or frozen broccoli. If using frozen broccoli, thaw it beforehand and pat dry.
Step 4
Remove the seeds from the bell pepper and cut it into small cubes.
Step 5
Peel the onion and cut it into small cubes.
Step 6
Heat the vegetable oil in a frying pan over medium heat. Add the onion and cook, stirring, until golden.
Step 7
Add the cooked onion, bell pepper, flour, eggs and spices to the ground meat and mix thoroughly until evenly combined. To help the broccoli retain its shape, mix the meat mixture first, then add the broccoli and gently fold it in.
Step 8
For the filling, you will need 4–5 eggs. Eggs with brightly colored yolks will give the sliced dish a more striking appearance.
Step 9
Hard-boil the eggs. Take them out of the refrigerator about 30 minutes beforehand. Place them in a saucepan of warm water, bring to a boil over medium heat, then reduce the heat and cook for 9–10 minutes. Transfer the cooked eggs to cold water, cool completely and peel.
Step 10
Place the ground meat mixture on a sheet of foil folded in half and shape it into an even rectangle. Arrange the boiled eggs in a single row down the center.
Step 11
Roll the meat mixture around the eggs to form an even log. Twist the ends of the foil closed like a candy wrapper to form a neat cylinder. Alternatively, place half of the meat mixture in a narrow loaf pan, arrange the eggs on top and cover with the remaining meat mixture.
Step 12
Transfer the wrapped meat roll to a baking sheet and bake in an oven preheated to 390°F for 40–45 minutes. Adjust the cooking time according to your oven. If desired, open the foil toward the end of baking so the top can brown.
Step 13
Transfer the baked meat soufflé with eggs to a serving dish, slice and serve.
