Baked Flatbread Rolls with Cottage Cheese and Processed Cheese

Preparation
Step 1
To make lavash with cottage cheese, we will need the following ingredients: one large sheet of thin Armenian lavash, cottage cheese (I use 5% fat), bell pepper (I used frozen), processed cheese, fresh dill or parsley, a couple of garlic cloves, salt, and pepper.
Step 2
Let’s start by preparing the filling. For this, use curd cheese (tvorog) with a fat content of 4–9%. Mash the curd cheese thoroughly with the processed cheese using a fork. Press a clove (or two) of garlic into the mixture using a garlic press; adjust the amount of garlic to taste. You can substitute the curd cheese and processed cheese with cream cheese.
Step 3
Thoroughly wash the dill under running water and dry it on a paper towel. Then, finely chop the herbs with a knife. In addition to dill, you can use other herbs such as parsley, cilantro, basil, green onions, spinach, arugula, mint, Herbes de Provence, oregano, thyme, or dried dill.
Step 4
Add the chopped herbs to the curd mixture and mix until uniform. If the mixture turns out too dry, you can add a spoonful of sour cream. It is best to taste the filling to check the seasoning and add more salt if necessary, keeping in mind the saltiness of the cheese.
Step 5
Lay a sheet of lavash flat on the table. Spread a thin layer of the herb-infused curd mixture over it. Distribute the mixture evenly, leaving a 1–2 cm margin along the edges. How do you choose the right lavash? First, check the production date on the packaging; do not buy expired flatbread. Fresh lavash should have a pleasant aroma. Carefully inspect it to ensure there are no spots or signs of mold.
Step 6
Wash the red bell pepper, remove the seeds, and dice it finely. The appetizer will look very attractive if you use bell peppers of different colors. Scatter the diced pepper over the lavash and cottage cheese mixture. You can substitute the pepper with cucumber, fish, or ham. Turn on the oven in advance (10-20 minutes before baking) so it has time to reach the required temperature.
Step 7
Roll the lavash with the cottage cheese and peppers into a tight log. Press down firmly on each turn with your fingers to ensure there are no air pockets inside. All oils are beneficial only up to a certain temperature - the smoke point - at which the oil begins to burn and produce toxic substances, including carcinogens.
Step 8
Place the lavash roll with processed cheese into a greased baking dish (or onto a baking sheet) and brush the top with egg that has been beaten in a bowl with a fork or whisk. Oven-safe baking dishes come in a wide variety of materials: some retain heat well, others withstand high temperatures, and some are easy to care for.
Step 9
Sprinkle sesame seeds over the lavash roll and bake it in an oven preheated to 200°C for approximately 25 minutes. Keep in mind that every oven is different; actual temperatures and cooking times may vary from those specified in the recipe. To ensure success with any baked dish, it helps to be familiar with the specific characteristics of your oven!

Let the lavash cool slightly, then cut it into pieces using a sharp knife. Serve warm or cold as an appetizer with sour cream, Greek yogurt, or tomato sauce. For a light dinner, serve with a fresh vegetable salad. For a hearty breakfast, add a poached egg or avocado. The rolls are also delicious chilled, as the filling sets and holds its shape.

Store the finished, cooled dish in the refrigerator in a covered container for 1-2 days. You can prepare the filling in advance and store it separately for a day, then wrap it in lavash and bake it just before serving.
