Baked Fish with Carrots and Mayonnaise

Preparation
Step 1
For this recipe, you can use any fish fillet - cod (as I used), pollock, hake, pink salmon, or whichever you prefer. If the fish is frozen, take it out of the freezer in advance and let it thaw at room temperature. Do not place the fish in hot water - that will make it dry.
Step 2
Pat the thawed fish fillet dry with paper towels to remove excess moisture. Cut the fish into small pieces and drizzle with lemon juice to remove the strong fish smell. Sprinkle each piece lightly with salt and fish seasoning. Keep in mind that mayonnaise will also add salt to the dish.
Step 3
Place the fish pieces in a baking dish - glass, ceramic, or metal. Peel and rinse the onions and carrots. Slice the onion and grate the carrot on a coarse grater.
Step 4
Spread the sliced onions evenly over the fish, then add the grated carrots on top. In a glass, mix mayonnaise with a little water and pour the mixture over the fish.
Step 5
Use a spoon to smooth the mayonnaise layer over the carrots. Place the dish in an oven preheated to 180°C (355°F) and bake for 40-45 minutes. Adjust the baking time according to your oven.
Step 6
While baking, some liquid will be released, but it will mostly evaporate by the end, leaving the dish with a beautiful golden color. Remove from the oven and place the fish on a serving plate.
Step 7
The baked fish with onions and carrots is tender and delicious. It pairs wonderfully with mashed potatoes or boiled rice. Enjoy your meal!
