Preparation
Step 1
You can adjust or replace the ingredients as you like. For example, use tomato instead of onion. Any cheese will work - hard, semi-hard, or soft (like mozzarella). The key is that it grates well, melts nicely when baked, and tastes good.

Rinse the chicken fillet, pat it dry, and cut it lengthwise into two halves. Cover the meat with plastic wrap and gently pound it with a meat mallet without tearing the pieces. Season the chicken with salt, pepper, garlic, and chicken spices. If using a ready-made spice mix, check the ingredients - many already contain salt and pepper, so don’t over-season.

Wash the mushrooms, dry them, and slice them thinly.

Slice the onion into thin rings.

Grate the cheese on a coarse grater.

Place the pounded chicken fillets in a greased baking dish. Spread a thin layer of mayonnaise on top (using a piping bag makes this easier).

Arrange the onion rings over the chicken.

Place the mushroom slices on top of the onions. Optionally, you can sauté the mushrooms and onions beforehand in oil until golden and tender to intensify the flavor. Then spread this mixture over the chicken.

Sprinkle the grated cheese evenly over the chicken and mushrooms.

Add a decorative drizzle of mayonnaise on top. Optionally, place a few mushroom slices for garnish.

Cover the dish with foil and bake in a preheated oven at 350°F (180°C) for 25-30 minutes.
