Baked Cheese Roll with Chicken Filling
A colorful and impressive appetizer that is surprisingly simple to prepare! The golden cheese layer surrounds a juicy chicken filling. Serve the roll hot or chilled, and vary the filling with meat, mushrooms or vegetables.

Preparation
Step 1
Prepare the ingredients, beginning with the filling. This recipe uses chicken, but you can replace it with pork, turkey or beef. You can also add other ingredients, such as mushrooms fried with onions.
Step 2
Rinse the chicken fillet and pat it thoroughly dry. Process it through a meat grinder or chop it in a blender. You can also use ready-made ground chicken.
Step 3
Cut the onion into small cubes.
Step 4
Heat the vegetable oil in a frying pan over medium heat and cook the onion until golden. Drain off any excess oil after cooking.
Step 5
Combine the ground chicken, fried onion, pressed garlic, salt and ground black pepper in a bowl. Mix thoroughly. Preheat the oven to 350°F.
Step 6
Prepare the ingredients for the cheese layer. Use a flavorful cheese that melts well, such as a simple semi-hard fermented cheese or low-moisture mozzarella. For the best texture, choose cheese with a fat content of at least 45% and without non-dairy fat substitutes.

Coarsely grate the cheese.
Step 8
Combine the grated cheese, eggs, sour cream, turmeric, paprika, salt and ground black pepper in a bowl. Mix thoroughly.
Step 9
Line a baking sheet with foil and place a sheet of good-quality parchment paper on top. Spread the cheese mixture evenly into a rectangular layer approximately ¼ inch thick. Bake in the preheated oven for 10–15 minutes, until the cheese has melted and the surface is lightly golden.
Step 10
Remove the cheese layer from the oven and leave it to cool for 3–5 minutes. Spread the ground chicken filling evenly over the surface.

Carefully roll the cheese layer and filling into a tight log.

Wrap the roll in foil with the folded edges positioned on top so the juices do not leak out. To prevent sticking, you can first wrap it in parchment paper and then tightly in foil. Place the roll on a baking sheet and bake for approximately 20–30 minutes, until the chicken filling is completely cooked. Open the foil for the final 5 minutes so the surface can brown slightly.

Transfer the finished roll to a serving platter, cut it into slices approximately ⅜ inch thick and serve hot or chilled.
