Bacon and Cheese Baked Appetizer
An appetizer that’s super simple, tasty, and very fast - perfect for celebrations! You can make bacon and cheese in the oven in 20 minutes. It’s made with three cheeses, each easy to swap for a pricier or more budget-friendly option. Great for breakfast, too!

Preparation
Step 1
How to make bacon with cheese? Prepare the ingredients. I use fresh raw bacon. If using frozen bacon, thaw it but not completely - so the strips separate easily. I use bryndza, but I think it can be replaced with cottage cheese. For the hard cheese I use Parmesan, but any hard cheese will work. To bind the cheese mixture, I use processed cheese. Prepare a baking dish and preheat the oven to 200°C / 392°F.
Step 2
Remove the bryndza from the package and drain any liquid. Crumble it into a bowl with your hands or a fork (or grate it). Add finely chopped dill (washed and patted dry) and garlic pressed through a garlic press (peeled beforehand).
Step 3
Remove the Parmesan from the package and grate it on a coarse grater. Add it to the bowl with the bryndza.
Step 4
Add the processed cheese and mix. The mixture should be dense and able to hold its shape.
Step 5
Lay a slice of bacon on a plate. Take about 1 tablespoon of the cheese mixture, shape it into an oval patty, and wrap it in the bacon. Wrap loosely, spreading the bacon over the cheese as evenly as possible so the filling peeks out as little as possible.
Step 6
Line the baking dish with parchment paper or grease it with vegetable oil. Arrange the bacon-wrapped cheese rolls in the dish. Bake in the preheated oven for about 15-20 minutes. You can use top heat with convection or grill/broil - adjust to your oven. If you like, sprinkle the rolls with grated cheese, too.
Step 7
Serve the bacon-and-cheese rolls hot. They hold their shape well, but some filling may ooze out. Serve the rolls together with any leaked filling and juices.
