Authentic Dukkah Recipe
A homemade nut and spice blend with roasted nuts, toasted sesame seeds, and aromatic spices, perfect as a flavorful topping or seasoning mix.

Preparation
Step 1
Preheat your oven to 160°C / 320°F.
Step 2
Spread each type of nut out separately on baking trays, or roast them in batches if you only have one tray.
Step 3
Start with the pistachios. They should be shelled but still have their thin skins. Roast them for 8-10 minutes, keeping a close eye to prevent burning, as oven performance can vary. Once roasted, remove from the oven and allow them to cool completely. Rub the cooled pistachios between your hands to remove most of the skins, as these can be slightly bitter.
Step 4
Next, roast the hazelnuts using the same method and timing as the pistachios. Allow them to cool, then rub off their skins in the same way.
Step 5
Flaked almonds require less time - roast them for about 6 minutes, watching carefully so they do not burn.
Step 6
Pine nuts are particularly delicate and can burn quickly. Roast them for 6-8 minutes, keeping a very close eye on them throughout.
Step 7
For the sesame seeds, use a pan on the stovetop. Toast them in a dry pan over medium heat, stirring constantly until they are fragrant and lightly golden. Remove them from the pan immediately to prevent overcooking and let them cool completely.
Step 8
Next, prepare the spice mix. Heat a dry skillet over medium heat and add the whole spices - cumin, coriander, and black peppercorns. Toast them while tossing continuously to avoid burning, until aromatic. Remove from the heat, allow to cool, then grind into a fine powder using a spice grinder or pestle and mortar.
Step 9
Once all the nuts have cooled, pulse them briefly in a food processor until broken into small pieces. Take care not to over-process, as this can release their oils and turn them into nut butter. If you don’t have a processor, roughly chop them by hand, first crushing them slightly with the side of a knife, then chopping until evenly sized.
Step 10
Transfer the chopped nuts to a mixing bowl. Add the toasted sesame seeds, the ground spice mix, thyme leaves, salt, and sugar.

Mix everything thoroughly until all ingredients are evenly combined.

Store the finished mixture in an airtight container until ready to use.
