Asian Soup with Meatballs, Noodles, and Beans
A rich, aromatic, and very filling soup! This soup with minced meatballs will appeal to many people because it is very hearty: meat, potatoes, beans, and noodles. No one will leave hungry. For extra heat, you can add hot chili pepper to the soup.

Preparation
Step 1
Prepare all the ingredients for making the soup with meatballs, noodles, and beans.
Step 2
Pour the broth into a pot. You can use meat broth, such as pork, beef, or lamb, as well as chicken or vegetable broth. Place the pot with the broth over heat.
Step 3
Meanwhile, peel the potatoes and cut them into small cubes.
Step 4
Season the ground meat with salt and pepper, then mix. Shape it into meatballs.
Step 5
When the broth comes to a boil, add the diced potatoes and meatballs.
Step 6
Rinse the leek under running water and cut it into rounds. Rinse and peel the carrot, then grate it on a coarse grater. Wash the red pepper as well, remove the stem and seeds, and cut it into strips. Wash the tomatoes and cut them into cubes.
Step 7
Heat the vegetable oil in a pan. First fry the leek rounds, then add the grated carrot, followed by the red pepper strips and diced tomatoes. Stew the vegetables for another couple of minutes.
Step 8
Add the tomato paste and fry a little longer.
Step 9
Transfer the sautéed vegetables to the soup, add the bay leaf, red beans, and noodles. I used canned beans, after draining all the liquid from them. There is no need to add the liquid to the soup. You can also use regular dried beans, soaking them in water beforehand and then boiling them until soft.
Step 10
Season the soup with pepper and salt, let it come to a boil, and cook until the noodles are done. It is better to slightly undercook the noodles, as they will finish cooking under the closed lid while the soup cools.
Step 11
Before serving, sprinkle the soup with finely chopped herbs. For extra heat, season with hot pepper if desired.
