Apple Purée with Citric Acid for Winter (No Sterilization)

Preparation
Step 1
Prepare all the necessary ingredients for making smooth apple purée for the winter.
Step 2
For the purée, take a large enamel pot and cut 3 kg (about 6½ lbs) of well-washed fresh apples into medium-sized pieces.
Step 3
Pour 300 ml (1¼ cups) of water into the pot with the apples and place it on the stove.
Step 4
Cover with a lid, turn the heat to slightly above medium, and stir the apples two to three times while bringing them to a boil.
Step 5
After 20 minutes, stir again, cover, and continue to cook for another 15 minutes.
Step 6
Remove the pot from the stove, then blend the apples with a blender until smooth and uniform.
Step 7
Depending on the apple variety and sweetness, add 150-200 g (¾-1 cup) of sugar to the purée.
Step 8
Stir well to dissolve the sugar evenly into the apple mixture.
Step 9
Return the pot to the stove, cover, and simmer over medium heat for about 10-15 minutes, stirring occasionally so the sugar fully dissolves.
Step 10
Add ½ teaspoon of citric acid, stir well, cover for 1-2 minutes, and then turn off the heat.
Step 11
Fill clean, sterilized jars to the top with the hot apple purée.
Step 12
Seal the jars tightly with sterilized lids, flip them upside down to check for leaks, then cover with a warm blanket until completely cooled.
