Step 1
How do you bake apple kefir cake? Prepare all the necessary ingredients. For this kind of baking, it is important that all ingredients are at the same temperature, so take the eggs out of the refrigerator in advance. Use wheat flour, preferably not extra-fine, but first-grade flour. Or use unbleached extra-fine flour with a high gluten content. The eggs should be large, preferably homemade, or at least size C0. It is best to use richer kefir, as the cake will be tastier.
Step 2
Whisk the kefir with the eggs and vegetable oil until smooth. You do not have to use a mixer; a regular whisk is enough.
Step 3
Add the sugar and vanilla sugar. Whisk again.

Add the cinnamon. Cinnamon is the perfect spice for apple cake, but it is not the only spice that works here. If you like spiced baked goods, you can also add ground cloves, ginger, nutmeg, or cardamom. Adjust to your taste.
Step 5
Sift the flour into the batter together with the baking powder and salt. I recommend not skipping this step, because sifting helps the finished baked goods turn out very airy and light, so be sure to use a sieve. I also recommend not adding all the flour listed in the recipe at once. Add it in portions to reach the right consistency. You may need a little less or more than stated in the recipe.

Mix the batter well; it is enough to mix it with a fork. The batter is quite runny. It should resemble pancake batter or thin sour cream. At this stage, add a little more flour if needed.

Cut the apples into slices. Tart, firm apple varieties are best for apple cakes. Such apples hold their shape well during baking and give the cake a slight tartness. Cut the apples into thin slices. There is no need to peel the apples, but the seed core should, of course, be removed. The ingredients list gives the weight of the apples already sliced and without the seed cores. Use a sharp knife for thin slicing.

Add the sliced apples to the batter.

Mix the batter with the apples well and let it stand for about 10 minutes so that each apple slice is coated with the batter.

Choose a wide, shallow heatproof baking dish for the cake; otherwise, the cake may not bake through. Grease the dish with oil. Pour the batter with the apples into the dish in a low layer. Toward the end of baking, check the center of the cake with a toothpick, because it takes the longest to bake. Adjust the time if needed; if batter sticks to the toothpick, keep the cake in the oven a little longer.

Bake the cake in an oven preheated to 180–190°C / 356–374°F for about 35–40 minutes. The time and temperature are approximate, so adjust them according to your oven. Let me remind you once again that the baking time also depends on the diameter of the chosen dish: the smaller the dish, the taller the cake will be, which means it will need to bake longer.
