First, prepare all the necessary ingredients to make delicious homemade cottage cheese pancakes with fresh apples.

In a large bowl, add 500 g (about 17.5 oz) of cottage cheese, ½ teaspoon of vanilla sugar, 40 g (about 3 tbsp) of semolina, and 50 g (about 4 tbsp) of sugar.

Crack one egg into the bowl.

Mix all the ingredients thoroughly and let the mixture rest for 15 minutes so the semolina can absorb the moisture and swell.

In a separate small bowl, combine 50 g (about ⅓ cup) of all-purpose flour, ½ teaspoon of baking powder, and a pinch of salt. Mix well.
