Anastasia Salad with Korean Carrots

Preparation
Step 1
Start preparing the salad by making the egg pancake. Sift the flour through a sieve. Use large, fresh eggs.

In a bowl, combine the eggs, sifted flour, water, and salt.

Mix well until smooth, breaking all lumps. If there are still lumps, strain the mixture through a sieve.

Heat vegetable oil in a skillet over low heat. Pour in the egg mixture and fry the pancake on both sides under a lid until cooked through. The smaller the pan, the thicker the pancake - it will take longer to cook. A larger pan is preferable.
Step 5
Transfer the ready pancake to a plate and let it cool.

Slice the pancake into thin strips.

Prepare the ingredients for the salad base. You can use store-bought or homemade Korean-style carrots. The chicken fillet can be substituted with a chicken leg, though this will change the calorie content.

Boil the chicken fillet in salted water until cooked through, then remove it, cool it, and cut into small pieces or shred by hand.

Cut the ham into thin strips. You can substitute it with smoked pork neck, ham, or loin if desired.

Finely shred the Napa cabbage (or substitute with Savoy cabbage).

Toast the walnuts in a dry skillet for 2 minutes, then chop them with a knife or grind them in a blender.

In a bowl, combine the chicken, ham, cabbage, Korean carrots, and sliced egg pancake.

Dress the salad with mayonnaise and mix gently.
