Preparation
Step 1
I recommend not using overly ripe pears, as they will boil down and turn into mush. Choose firm, springy fruit that feels solid to the touch. I used regular white sugar. But nowadays there are many types of sugar: you can use coconut sugar, which will give the jam a light coconut aroma, or cane sugar, which will add a caramel note. Wash the pears well. Cut off the stems, remove the seed core, and slice them into pieces about 3-4 mm thick (about 1/8 inch).

Put the sliced pears into the pot in which you will cook the jam. It is best if it has a thick bottom. Pour in the sugar and leave it for several hours so the pears release their juice.

Juicy pears release enough juice on their own, and extra liquid will make the jam runny and prevent it from reaching the desired thick, amber consistency. Once the fruit has released its juice, place the pot over very low heat.

At this stage, lovers of spiced jam can add their favorite spices: vanilla sugar or vanilla, cinnamon, ground ginger, cloves, or nutmeg work especially well. You can also use vanilla pods, cinnamon sticks, or clove buds, just do not forget to remove them from the finished jam later. Ground spices are also suitable, and one pinch of each will be enough for aroma.
Step 6
To keep the jam from burning, bring it to a boil and cook it over very low heat for about 40 minutes, constantly skimming off the foam that forms on the surface.
Step 7
After about 40-50 minutes, the jam will thicken and take on a beautiful amber color. The exact time will depend on the pear variety, the pot you use, and the way your stove heats.
Step 8
Wash the jars with baking soda and sterilize them in any convenient way. I place jars with water in the microwave for 5 minutes, but you can also sterilize them in the oven or over steam. Wash the lids and boil them.
Step 9
You can seal the jam either hot or cooled. Spoon the finished transparent pear jam in slices into jars and close or seal them with lids. No further sterilization is needed. This jam keeps well under normal apartment conditions.
Step 10
Thick amber pear jam in slices is ideal with fresh baked goods such as crepes, pancakes, and cottage cheese pancakes, as well as with soft cheeses, cottage cheese, or ice cream. It can also be used as a sweet sauce for toast and crisp toasts. Enjoy your tea!
