African Spring Rolls
Crispy homemade spring rolls filled with seasoned turkey and vegetables, wrapped and fried until golden brown and perfectly crunchy.

Preparation
Step 1
To prepare the filling, heat oil in a large frying pan over medium heat. Add the onions and sauté for 2-3 minutes until they become soft and translucent. Stir in the chopped garlic and cook for another 2 minutes until fragrant.
Step 2
Add the ground turkey and increase the heat to high. Cook while stirring constantly, breaking up the meat, until it changes from pink to fully browned.
Step 3
Once browned, add the soy sauce, salt, black pepper, and cayenne pepper. Reduce the heat to medium and continue cooking for 2-3 minutes, allowing the flavors to develop.
Step 4
Add the shredded cabbage and carrots, then increase the heat back to high. Stir-fry for about 5 minutes, stirring frequently to prevent burning. If needed, lower the heat slightly. The vegetables should soften and reduce in volume.
Step 5
Remove the pan from the heat and allow the filling to cool completely.
Step 6
Just before assembling, prepare a simple sealing paste by mixing 1 tablespoon flour with 1 tablespoon water until thick.
Step 7
To assemble the spring rolls, place about 1 tablespoon of filling onto each wrapper. Fold and roll tightly, sealing the edges with the flour paste. Avoid overfilling. Keep unused wrappers covered with a damp cloth to prevent them from drying out.
Step 8
Place the prepared spring rolls under cling film until ready to cook. If not frying immediately, freeze them on a tray first, then transfer to a container or bag for storage.
Step 9
When ready to cook, heat oil in a frying pan to 170-190°C (350-375°F). Fry the spring rolls in batches for 5-7 minutes, turning occasionally, until they are golden brown and crisp.
Step 10
Remove from the oil, drain, and let them cool for about 5 minutes before serving.
