Adjarian Khachapuri Boats with Button Mushrooms
Tasty Adjarian khachapuri in a new version! This take on the famous dough “boats” works well for those avoiding rich ingredients. You can vary the mushrooms: use fresh wild mushrooms in season, and frozen ones in winter.

Preparation
Step 1
Prepare all ingredients. For the dough use all-purpose flour, fast-acting dry yeast, sugar (1 level tsp), slightly warm water, fine salt, and neutral vegetable oil. For the filling take fresh button mushrooms (you can swap for oyster mushrooms or chanterelles), plus onion, garlic, spices, and herbs.
Step 2
Warm the water to about 30°C / 86°F and pour into a mixing bowl. The water must be warm, not hot, or the yeast will die. Add the dry yeast and sugar and, stirring, dissolve them completely - no grains or lumps should remain. Set aside for 10-15 minutes to activate.
Step 3
After that, add salt and pour in the neutral vegetable oil to make the dough more elastic. Whisk the mixture.
Step 4
Sift the flour. This aerates it and helps make the dough softer, and also removes any impurities. Add the sifted flour gradually to the liquid mixture.
Step 5
First mix the dough with a spoon in the bowl. When it thickens and comes together, knead by hand on the work surface for about 7 minutes, dusting with flour as needed. Don’t overflour - the dough should be soft and not stick to your hands. Depending on the flour, you may need a bit less or more than stated. Shape into a ball, return to the bowl, cover with a clean towel, and leave in a warm draft-free place for 40-60 minutes.
Step 6
Meanwhile, make the mushroom filling. Rinse the mushrooms, optionally remove the “skirt,” and slice them. Peel the onion and garlic, rinse, then slice the onion into thin half-rings and dice the garlic finely.
Step 7
Heat vegetable oil in a skillet. Fry the onion half-rings until soft, about 5 minutes. Add the garlic and fry until fragrant. Add the mushrooms and cook until all moisture evaporates. Season with salt and pepper to taste and fry a little longer.
Step 8
By now the dough should have risen. Punch down the rested dough and leave it for another 15 minutes. Meanwhile, preheat the oven to 200°C / 392°F.
Step 9
After 15 minutes, punch down again. Take 1/3 of the dough, form a ball, and roll it into an elongated flatbread. Do the same with the remaining dough. Place the mushroom filling onto each flatbread.
Step 10
Roll each long edge inward in a couple of turns toward the center. This forms khachapuri “boats.”
Step 11
Bake the Adjarian khachapuri with mushrooms in the preheated oven for 15 minutes. Time and temperature may vary depending on your oven. Transfer the hot khachapuri to a plate, sprinkle with chopped herbs, and serve hot. If you like, brush the crust with a piece of butter.
